2. Properties: White crystalline granules or powder, odorless, freely soluble in water. The aqueous solution is prone to oxidation in air; trace metal ions, heat, or light accelerate oxidation. Relatively stable in dry conditions.

4. Advantages and Applications: Sodium D-isoascorbate is a non-acidic, novel biological food preservative recognized as a safe and legal food additive by the WHO, FAO, U.S. FDA, Canada, and the EU.
Food Industry: Acts as a preservative for meat products, canned foods (meat, fruits, vegetables), fresh fruits/vegetables, beer, wine, fruit teas, juices, jams, frozen seafood, baked goods, etc. Inhibits nitrosamine carcinogen formation, suppresses bacterial growth, extends shelf life, preserves appearance/color/flavor, and prevents discoloration, off-flavors, or turbidity in beverages. Notably protects vitamin C content in juices and jams.
Fruit/Vegetable Preservation: Inhibits bacterial growth, reduces oxidative enzyme activity, and prevents spoilage.
Other Uses: Oxygen scavenger, corrosion inhibitor, and scale remover. Added to boiler water to capture oxygen and reduce scaling. Replaces harmful chemicals (e.g., hydroquinone) in photographic developers. Functions as a stabilizer in chemical production, electrolyte in electroplating, and aids in metal powder production, heavy metal recovery, polymer synthesis. Also applied in textiles, construction materials, petrochemicals, and wool industries.
