Low Acyl Gellan Gum

Gellan gum is a microbial exopolysaccharide. As a multifunctional thickener, gelling agent, stabilizer, etc., it is widely used in numerous industries such as food, pharmaceuticals (e.g., soft and hard capsules), cosmetics, and chemical engineering. Gellan gum can be classified into two types: low-acyl and high-acyl.
Due to its excellent characteristics such as being natural, safe, non-toxic, and highly effective, gellan gum is attracting increasing attention from consumers, particularly food scientists.
Gellan gum has been widely applied as an emulsifier, suspending agent, thickener, stabilizer, gelling agent, film-forming agent, and lubricant in various fields including food, pharmaceuticals, and chemical engineering. It is one of the promising microbial polysaccharides developed in recent years.

Low-Acyl Gellan Gum:
Excellent gelling properties, primarily used as a stabilizer, gelling agent, and suspending agent.

Description

Product Description:
Low-acyl gellan gum possesses excellent gelling characteristics and is primarily used as a stabilizer, gelling agent, and suspending agent. It is widely used in protein beverages, jellies, bubble tea pearls, meat products, soft candies, confectionery, and pet canned food. It is also applicable in non-food industries such as microbial culture media, pharmaceuticals, air fresheners, and toothpaste.
• High transparency: Significantly improves the quality and appearance of beverages.
• Application in jelly products: Especially suitable for various colored jellies and premium jellies. Enables production of products in various colors without color deviation, enhancing visual appeal and helping to elevate product quality grade.
