High Acyl Gellan Gum

Gellan gum is a microbial exopolysaccharide. As a multifunctional thickener, gelling agent, stabilizer, etc., it is widely used in numerous industries such as food, pharmaceuticals (e.g., soft and hard capsules), cosmetics, and chemical engineering. Gellan gum can be classified into two types: low-acyl and high-acyl.
Due to its excellent characteristics such as being natural, safe, non-toxic, and highly effective, gellan gum is attracting increasing attention from consumers, particularly food scientists.
Gellan gum has been widely applied as an emulsifier, suspending agent, thickener, stabilizer, gelling agent, film-forming agent, and lubricant in various fields including food, pharmaceuticals, and chemical engineering. Product Description:

High-acyl gellan gum is a pale yellow powder with the following characteristics:

  1. Excellent elasticity after gelation
  2. Good dispersibility and hydration
  3. Low protein reactivity and good acid stability
  4. Good pseudoplasticity imparts a favorable mouthfeel to products

Commonly used in opaque beverages or foods: dairy products, coarse grain beverages, plant protein beverages, fresh fruit or vegetable juice beverages, health beverages, meat products, etc. Can also be blended with colloids such as CMC, guar gum, microcrystalline cellulose, pectin, carrageenan, etc., to broaden its application range.
