Description
Product Performance:
- Strong Antioxidant Capacity: 5-7 times stronger than BHA, BHT, PG, etc.
- Synergistic Effects: Exhibits synergistic effects when used with other antioxidants (such as BHA, BHT) and chelating agents (such as citric acid).
- Heat Resistance: Suitable for high-temperature processed foods, such as fried foods, due to its good thermal stability.
- Antimicrobial Action: Effectively inhibits the growth of bacteria and molds.
- Resistance to Discoloration: Does not cause flavor or color changes upon contact with iron or copper ions.
- Safety: Acute toxicity level is classified as low toxicity.
- Fat Solubility: Soluble in animal and vegetable fats and oils, facilitating easy addition and use.
Usage Methods:
- Direct Method:
Heat the oil/fat to 60~70°C. Add the required proportion of TBHQ and stir vigorously for 10~15 minutes until dissolved. Continue stirring (avoid excessive force to prevent excessive air incorporation) for approximately 20 minutes to ensure uniform distribution of TBHQ. - Concentrate Method (“Seed Method”):
First, completely dissolve TBHQ in a small amount of oil/fat (or a 95% ethanol solution) to prepare a 5%~10% TBHQ concentrate (in oil or ethanol). Then, add this concentrate directly or via a metering device to the bulk fat or oil. Stir to ensure uniform distribution of TBHQ. - Pump Circulation Method:
Inject the TBHQ concentrate solution prepared by the “Seed Method” into the pipeline of the fat or oil requiring stabilization, using a stainless steel metering pump, according to the specified proportion. The pipeline must have a fixed flow rate and volume. Ensure sufficient turbulence is generated within the pipeline to achieve uniform distribution of TBHQ. - Spraying/Dipping Method:
For cured meat products, dried fish products, nuts, etc., a diluted TBHQ solution can be sprayed directly onto the surface or the products can be dipped in the diluted solution. The solution concentration can be adjusted according to the requirements of different foods. Generally, a 0.5g/kg TBHQ solution in ethanol (or propylene glycol, or vegetable oil) can be used for spraying or dipping. It is essential to ensure TBHQ is evenly distributed on the product surface. - Mixing Method:
Mix directly with solid ingredients until uniform.
Precautions:
- Must be fully dissolved in oil/fat.
- Avoid use under alkaline conditions.
- TBHQ addition should not exceed 0.02% (based on fat/oil content).
- TBHQ must not be used in combination with PG (Propyl Gallate).
- Citric acid can enhance the antioxidant activity of TBHQ.
